One of the many joys of travel is exploring the areas of food and culture. I have had the excellent opportunity to dine at some great restaurants in the mountains of Northan, Italy. One of them has been Le Sapin Italian restaurant specializing in the most exquisite Northern Italian dishes. The menu formula is simple: incredible meat, gigantic shrimp, fabulous salads, and decadent desserts. Classic Italian Alps food prepared and presented in a manner that keeps people like me going back again and again. Eating in the Italian Alps was an experience that I will remember for a lifetime.
Owner/Chef, Franco Filice, (and interpreter son Maurizo Filice) sits down with Gwen Cash from Ask Gwen Cash. Here he shares a bit about the 26-year-old restaurant and how quality and service are the two main ingredients that make up the culture at Le Sapin.

AGC: Tell us a little about yourself. Where are you from, family etc…
FF: I am from Colosimi, a little village in the beautiful Sila plateau in Calabria (Southern Italy). I am the third of five siblings (two older brothers and two younger sisters), all now living between Piedmont and Aosta Valley.
AGC: What inspired you to become a chef?
FF: I have always loved cooking and started to work in a kitchen in 1972 when I moved from Calabria to Aosta Valley.
AGC: What can people (first-timers) expect when dining at Le Sapin?
FF: To taste delicious plates reasonably priced!
AGC: What is the secret to cooking the perfect pasta?
FF: No secret, the quality has to be excellent
AGC: What is the most popular dish at Le Sapin?
FF: Beef tagliatelle
AGC: Who is responsible for your wine list?
FF: I am responsible for the wine list
AGC: How do you decide on what wines to stock at the restaurant?
FF: Before buying new wines, I personally tastes them all.
AGC: If you were not in the restaurant business, what would you be doing?
FF: I enjoy anything involved with driving!
AGC: On your off days, what do you like to do?
FF: I enjoy playing with cards, taking trips by car, and going in the forest to collect mushrooms
AGC: Do you cook meals at home? If so, what do you like to make?
FF: Yes, I love doing that. I prefer cooking meats.
AGC: What is your favorite thing about Champoluc, Italy?
FF: The climate
AGC: Give me a word that describe Le Sapin?
FF: Consistency. I LOVE Sapin
